You took your tray along, canteen style.
You ordered food, they gave you a ticket for the meal. You ordered coffee, you deliberately put the coffee on top of the ticket on the tray. Paid for the coffee only.
They called out the meal from another window (out of sight of the main area. Collected meal that you hadn't paid for. Simples.
