The hysteria around it has been whipped up to the point that there are probably septuagenarians sat at home worried that a pitch fork wielding mob will have their garden gnomes stolen and their windows through because they once described a barmaid as being "particularly well upholstered" in 1976.Not that I ever cared about it but at first it seemed like "cancel culture" was about people getting taken off speaking events or shows, but now it seems like being "cancelled" means that Twitter is mad at you for two days until the next meme comes along.
In reality its largely stemmed, as you say, from a few student union speaking gigs by controversial figures being pulled largely because nobody wanted to listen to them in the first place. Its then been co-opted by variously celebrities who have become increasingly unpopular over a period of time due to a pattern of unsavoury comments and dick head behaviour coupled with increasingly poor professional output (i.e. Morrissey). We are now at the point where any public figure who comes in for criticism (justified or not) will claim they have been 'cancelled' rather than engage with what is being said or try to argue their position.
