Used to live just up the road from the exchange (Westcliff rather than Southend, surely?) and saw a few Blades games in there. Small, but not bad!

For some bizarre reason Newcastle Airport don't have sky sports within the complex.

So prior to my flight I am going to have to frantically search for some form of viewing on my phone, any suggestions on how to best do that i'm all ears!

No problem, just don't forget to change that Unknown Sources setting back or dodgy apps may be able to infect your phone. As bigbed has said, if you can get a Chromecast to whack it on the big telly it's even better.
