I grew up with the 11-2 win against Cardiff as our record victory. I just went to check that our record away win was 10-0 against Port Vale (it is - fantastic omen for tomorrow) and Wikipedia has our record win/s as 10-0: the Port Vale game, and another 10-0 at home against Burnley.

1) What happened to the 11-2 game? Have the goalposts moved to biggest margin without anyone telling me? Or is this just someone grinding an axe?

2) Are there match reports online of any of these games? (Google is not much help here.) I once went down the library to look up reports of the 1925 :) and 1936 :( Cup Finals but never got round to these others.

It definitely happened. Perhaps the biggest win is considered to be the biggest margin, not the number of goals scored.

Cardiffs highest away loss was 11-2 against the blades on 1/1/1926

Statto.com has the blades 11-2 win as the record.

The new offside rule was introduced in 1925 and a lot of defences struggled with that. In 1926-27 season, George Camsell scored 59 league goals but in the following season Dixie Dean scored 60 league goals!

The record win depends on the publication. In past publications of club records, it was always the 11-2 v Cardiff, however in recent years, it's been the two 10-0 wins. Obviously one represents our highest number of goals scored and the other is the margin of win. Not sure of the reason for the change.
