I'm not sure about the full Youth team at Manchester United but they have a great Academy director that encourages alot of the same things I've discussed, I don't work for MU, I work for the company Pro Skills Coaching, my boss does work for MU as well as the Pro Skills stuff.
The problem you highlighted about 'athletes' is a key thing we try and battle against; coaches who see the fitness work the professionals do on a saturday and try to incorparte into their youth teams training regime. When really one of the best things they could be doing is giving them a ball and focusing on the required skill technique train. After all its good fitness in itself if the training is done at varying degrees of tempo and involves sufficient challenges.
I'll finish this later. I must stress though that my way isn't the only way, but the program I work for has proved successful in its methods, so I believe in the program.
