I made the point in the Food thread, the products the likes of Compass sell aren’t overly subjected to extreme waste, in the way independents, pop ups etc could be. Claims are made without reference to this, the pop ups profit requirements as well as logistics* or any effect on the clubs income. Just thinking something is a good idea doesn’t mean it is if it’s not financially viable.
* Quick points. Vendors need to have different cooking, prep or heating facilities. Club pays? ROI? Getting ready. Ground opening early, staff costs increase. Picking there stuff up Sunday, ditto. Vendor not making it pay, leaves. At some point the myriad of people wanting to do it dwindles. We’re then down to car boot pay for a pitch scenario. Catering for our sort of gates isn’t like doing it for L2 sides. Vendors costs are far greater to increase whereas Compass etc can say what they will pay. Finally, any self respecting pop up will want to serve good food which takes longer than grabbing a pie from an oven.
At least use a bit of crayon and a fag packet when formulating business plans. In fact there’s a whole new section on the forum discussing similar problems.
