I was thinking about this on the way to the Wolves game.
I'd say Wolves(at home) is a candidate, even if Sunday's game wasn't a classic. I can recall a great performance against Wolves (and Bull) in our 89 promotion season, a 3-3 draw when our fan spat at Graham Taylor, a fantastic win against an excellent Wolves team post Bouncing Day, Egan's last minute header in lock down and Norwood's injury time winner in our miserable relegation season. In contrast I usually assume Preston and Stoke games will be dull.

West Ham have to be up there. A quality goal by a quality player, smashing them 3.0 in 1979 and thinking we'd stay up. 3.2 after being 0.2 down, that Whitehouse half volley! Amongst other numerous games. Always looked forward to playing them, post Tevez added more spice. Doyle's cockney walk. Also the VAR decision at the Lane game 🖕

We drew with them 3-3 a few weeks before we played them in the PO final in 2003 too. If I remember, we rested a few players as we were guaranteed a play off place, and Pesch scored a couple

Great shout, certainly at home. In addition to those you've mentioned I've seen a 3-3 draw in ~2004 or so when Jagielka equalised in injury time, the 3-0 win in 2007 where it looked like we'd sealed safety (...), and a 2-2 draw last time we played where McBurnie equalised in about the 102nd minute with a pen. We also knocked them out of the FA Cup on pens in 2005.

I'm excluding any behind closed doors games because why wouldn't you. But that's a great run of exciting and enjoyable home games against West Ham. The streak might end this season, mind...

Derby at home, but not away
West Brom
Norwich games are usually good
Bristol City

Minus 100,000 entertainment points for Birmingham

I recall a brilliant horizontal diving headed goal from Gil Reece to a Willie Carlin cross against the Hammers.

The same game Willie broke Frank Lampard's leg, Frank Lampard Senior's leg that is.

Unfortunately, some guy called Moore played brilliantly in their defence that day and a bloke called Hurst scored twice in their 2-1 win.

A fella called Peters played too and later managed us. Into Division 4. 🤦‍♂️

After Wednesday evening I can confirm that it definitely isn't Fleetwood Town!
