I have. He said

You can ruin paella by having too much meat or too much fish or too much rice but you can't make rice from potato. Right now, we have rice and meat and some of those little fish that are salty but we need chorizo and balls. Big piggy balls. To add flavour. You can throw a paella at the wall but it's still a paella, even when the ingredients are scattered to the wind. Today, we have too much nutmeg.
