I know that's the rule but does anyone know why you can't or shouldn't be flagged offside in this instance? It seems a bit daft to me.

The answer lies in the fact that the ball is dead until kicked once it's gone out of play. You can't be offside if the ball is dead: hence no offsides from throw ins, corners or goal kicks.

Like I said, I did know the rule but never understood why. It all makes sense now.

Again, thanks for the reply, you've eased a lot of pain from the suffering of waiting for the answer, I just came to the conclusion nobody knew the answer, either that or i'm on ignore from a lot of posters.
